I have a cooking apple tree in my garden which is there for approx 80 years. There’s a huge crop of apples on it but you cannot use them. They look perfect but they are very sour and no amount of sugar can sweeten them.

Apples tend to increase sugfar levels the longer they ae on the tree. A ripe apple lifts off the stem when lifted gently.

It is possible that you are using these apples before they are ready. They do not have to be fully ripe, but the less ripe they are, the more sour.
