Why do potato seeds go soft? Is there anything I could have done to stop them going soft? Planted them at the end of April, will they be ok?

Presumably you meant they were soft before planting, which this is due to drying out and they have, most likely, taken up moisture from the soil since and firmed up and will grow normally.
