how do i get rid of greenfly and earwigs on my sunflowers. the leaves are all holes

Greenflies do not eat holes and earwigs eat very likely. The holes were probably made by snails, perhaps sometime ago, and the holes have increased in size as the plants grew.
Usually the normal predators control greenflies and when flowers are open there is a threat to bees from spraying. Use a strong jet of water to reduce or remove the greenflies.
